As you may know, some time ago, after lengthy development, we began stone grinding our seed and nut butters. Now, having received delivery of our purpose-built grinders, we are using them to produce RAW creamy, nut and seed butters with careful low temperature grinding and still with absolutely NO additives. Stone grinding, while a slow process, improves the available nutrient value, preserves quality and broadens the range of alternative uses.

However, some of you who are used to the drier, more spreadable versions have mentioned that certain varieties of the butters, usually those made from the oilier nuts, produced stone ground butters that were more liquid than those you prefer to spread on crackers, etc. We listened to you and so our LOVE RAW FOODS™ butters are now thicker and spreadable with taste and texture unmatched!

OCTOBER RECIPES

Easy, Moist and Cheezy Coconut Flour Biscuits

(makes 8 biscuits)

4 large eggs

1/4 cup butter or extra virgin coconut oil

1/4 teaspoon salt

1/3 cup coconut flour

1/4 teaspoon baking powder

1/4 cup nutritional yeast (or ½ cup sharp cheddar cheese)

Preheat oven to 400°F.
Prepare a cookie sheet with oil. Blend together eggs, oil, and salt; Mix coconut flour, baking powder and nutritional yeast in a separate bowl. Add the dry ingredients to the egg mixture. (If you are using cheese, fold it in last. Mix until there are no lumps.

Using a tablespoon, drop by rounded spoonful onto the cookie sheet and bake at 400°F for approximately 15 minutes. (These biscuits can brown quickly on the bottom and usually cook more evenly when placed on the top rack in the oven.)

 

Scrumptious Nutty Fudge

(fills one loaf pan)

3/4 cup raw cocoa powder

4 tablespoons raw honey, coconut sap, or agave

5 tablespoons coconut butter

4 tablespoons almond or cashew butter

1/4 cup chopped pecans or walnuts

Blend together the first 4 ingredients until smooth. Spread into a loaf pan and sprinkle with the pecans or walnuts. Refrigerate until firm and then cut into squares. (Please remember that coconut oil is a liquid at 76°F, so you will want to keep refrigerated or frozen.)
